Lost Nation Catering

To insure the finest barbecue, Lost Nation slow smokes over select native hardwood and charcoal. We buy the finest, freshest meats. Our barbecue will show a strong pink-to-red coloration called a “smoke ring”. This is due to being cooked in the time-honored fashion: over a hardwood fire. A smoke ring is also sought by barbecue judges as proof of authentic barbecue. The smoke ring is not an indication of undercooking, as the barbecue spends many hours in the smoker and finishes at a “well-done” temperature of 165-200 degrees, depending on the type of meat.

 Our Menu Includes:
BARBECUED PORK SHOULDER OR BUTTS
Classic pulled pork. A great way to enjoy the slow smoked flavor that hardwood fuel offers. The outer 'bark' or crust is flavored by our custom blended spices that are hand rubbed onto the perfectly trimmed shoulders. The 'smoke ring' is evident in the tender moist meat as the shoulder roasts slowly and renders out the fat and leaves the succulent meat with a smokey flavor. Served on a bun and topped with one of our homemade barbecue sauces, this is a traditional barbecue treat that is a great value.
PORK RIBS
Everybody loves our award winning pork ribs. Slow smoked with locally grown cherry, apple or sugar maple, Lost Nation ribs are like no other ribs you have eaten before. Our custom made smoker is the perfect cooker for our hand rubbed ribs. These mahogany colored ribs are the favorites of everyone who eats them.
BARBECUED BEEF
While pork is the most popular item to barbecue, beef is gaining in popularity. Barbecued beef shoulder (chuck arm roast) is a cut that takes smoke beautifully, while it's being slow-rendered to soft and tender pieces of meat that are equally at home on a bun with some sauce as they are on a plate as a main-course attraction. Lost Nation will slow smoke traditional beef brisket or higher end roasts such as prime rib. Whatever you choose, Lost Nation can grill it, smoke it or roast it to your specifications!
POULTRY AND SEAFOOD
Lost Nation does not limit itself to just pork and beef. We can do barbecue chicken, seafood and other products off the grill. Our limitations are determined only by your imagination! If there is something you would like to try off the grill or smoker, we can do it for you.
SIDE DISHES
We are traditional barbecue purists at Lost Nation and enjoy our barbecue with baked pinto beans and creamy cole slaw; but that doesn't mean you have to. We offer other pasta, potato and green salads along with anything else that you can think of.

BULK PICK UP BY THE POUND, PINT, QUART, OR SLAB You can come to my home and pick up any barbecued meat hot and ready to eat or frozen in a vacuum pouch. This includes your selected menu items, sauce and condiments.
